Bacon, Bacon Wrapped Scallops

Ingredients 

1 lb Fresh Sea Scallops, about 16 scallops

8 slices of thick cut bacon, cut in half

½ cup Lighthouse Keepers Maple & Herb Bacon Jam

 

Instructions:

Preheat oven to 425 F. Line an oven safe baking dish with parchment paper and set aside.

Pat scallops dry with a paper towel and remove any side muscles. Spread bacon jam on the flat sides of each scallop. Wrap bacon slices around the edges of each scallop securing with a toothpick. Bake for 12-15 mins until scallops are tender and opaque and bacon is cooked through. Serve hot.
