Bacon Wrapped Turkey Meatloaf

Bacon Wrapped Meatloaf:

Ingredients:

2 lbs ground turkey

1 med White Onion, Chopped

1 cup Breadcrumbs

½ cup Milk

2 Eggs

2 Tbs Lighthouse Keeper’s Cranberry Ketchup

1/3 cup Fresh Parsley, chopped

½ tsp Salt

¼ tsp Pepper

8 slices of bacon, cut in half

For the Sauce:

1/3 cup Lighthouse Keeper’s Cranberry Ketchup

¼ cup Brown Sugar

1 tsp Dry Mustard

Instructions:

Preheat Oven to 350F and spray a 9”x4” loaf pan with cooking spray and set aside.

In a large bowl, add all the ingredients of the meatloaf together, except bacon, and mix well.

Place the meat mixture in the prepared loaf pan and smooth out the top with a spatula. Cover with bacon slices, tucking in the bacon over the sides.

In a small bowl, whisk the sauce ingredients together.

Brush half of the sauce over the meatloaf.

Bake at 350F for 1 hour and 30 mins. Halfway through take the meatloaf out and brush the remaining sauce over it and continue baking.

Let cool for about 10 mins, gently remove from the pan, then cut into slices for serving.
