Blueberry Oatmeal Cookie Recipe

Blueberry Oatmeal Cookies

Ingredients:

½ cup Sugar

4 tbs Lemon Zest

1 cup Unsalted Butter, Melted

6 tbs Milk

4 tsp Vanilla Extract

2 cups Flour

1 cup Brown Sugar

2 cups Rolled Oats

2 tbs Corn Starch

1 tsp Baking Soda

1 tsp Kosher Salt

6 tbs Lighthouse Keeper’s Citrus Cinnamon Blueberry Jam

2 cups Fresh Blueberries

4 tsp Cinnamon

 

Instructions:

Preheat Oven to 375F.

Massage lemon zest and sugar together, add melted butter, brown sugar, milk and vanilla and combine.

In another bowl, add flour, oats, corn starch, baking soda, cinnamon and combine.

Combine wet ingredients to the dry and add blueberry jam and mix together.

Refrigerate batter for at least 30 mins.

Scoop cookies into appx 2” balls and place on a parchment lined baking sheet.

Bake at 375 for 20 mins.

Yield 18 Cookies
