Chicken Burgers with Cranberry Horseradish
1lb ground chicken
½ cup Shredded Carrots
1 Garlic Clove, grated
1 tbs Soy Sauce
1 tbs Honey
2 tbs Lighthouse Keeper’s Cape Cod Horseradish
1 tbs Breadcrumbs
1 tbs Olive Oil, plus 2 tbs for cooking
Salt and Pepper to taste
For sandwiches
Pitas
Tomato Slices
Arugula
Feta Cheese Crumbles
Lighthouse Keeper’s Cape Cod Horseradish
Instructions:
In a medium bowl, mix together ground chicken, carrots, garlic, soy sauce, honey, horseradish, breadcrumbs, olive oil, salt and pepper.
Make into 4, 4” patties.
In a large skillet over high heat, drizzle 2 olive oil, cook patties until browned.
Assemble into sandwiches as desired.
