Cranberry & Cabbage Salad

Ingredients

For the Dressing:

½ cup Olive Oil

1/3 cup Champaign Vinegar

4 tbs Lighthouse Keeper’s Cape Cod Horseradish

1 clove Garlic, minced

1 pinch Red Pepper Flakes

1 ½ tsp Cape Cod Saltworks Classic Sea Salt

 

Salad

1 head Red Cabbage, cored and chopped into thin pieces

1 bunch Parsley, chopped

1 ½ cups Chopped Walnuts

½ cup Golden Raisins

½ cup Dried Cranberries

Instructions:

In a small bowl, combine the ingredients for the dressing and use a whisk to mix together. Set aside.

In a large bowl, add chopped cabbage, parsley, walnuts and raisins and dried cranberries. Pour in the dressing and use tongs to toss and fully combine.
