Cranberry Orange Nut Bread
Ingredients
2 cups Flour
1 cups Sugar
1 ½ tsp Baking Powder
1 tsp Salt
1/4 tsp Ground Ginger
½ tsp Cardamom
½ tsp Baking Soda
3/4 cup Orange Juice
1 ½ tsp Orange zest- 2 oranges
2 tbs Unsalted Butter, melted
1 Egg
1 ½ cups Cranberries, plus more for topping
½ cup Walnuts, roughly chopped, plus more for topping
1/4 cup Lighthouse Keeper’s Orange Marmalade
Instructions:
Preheat oven to 365F. Grease a 9"x5" loaf pan.
Mix together flour, sugar, baking powder, salt, ginger, cardamom and baking soda in a medium mixing bowl.
Stir in orange juice, orange zest, butter and egg. Mix well until blended.
Fold in cranberries and nuts.
Scoop half the batter in the loaf pan, spoon in the orange marmalade in the center of the batter leaving the edges clear of the marmalade.
Scoop the remaining batter evenly on top and sprinkle with cranberries and walnuts.
Bake at 365 for 65 mins or until a tooth pick inserted comes out clean of batter.
