Grilled Chicken Sandwiches with Pickles & Cranberry Mayo
Ingredients
4 Chicken Breasts
Black Pepper, to taste
4 Slices Cheddar Cheese
Iceberg lettuce, shredded
4 Sandwich Rolls
¼ cup Mayo
½ cup Lighthouse Keeper’s Cape Cod Cranberry Ketchup
1 Jar Lighthouse Keeper’s Sweet & Tangy Bread & Butter Pickles
Instructions:
Sprinkle chicken breasts with black pepper and grill, adding cheddar just before removing from heat.
In a small bowl, combine mayo and cranberry ketchup and mix well.
Spread mixture on the bottom half of each sandwich roll. Add chicken breast, shredded lettuce and pickles and top with the other side of the bun. Serve hot.
