Herb Roasted Crispy Potatoes

Ingredients:

·      1.5 lb fingerling or baby potatoes, cut in half

·      2 tbs Sea Salt 

·      1 tbs Baking Soda 

·      ½ cup Olive Oil

·      1 tsp Onion Powder

·      1 tsp Garlic Power

·      2 tbs Cape Cod Salt Works herbs de Provence Sea Salt

·      1 cup Grated Parmesan

·      1 tbs Fresh Thyme

 

Instructions:

·      Preheat oven to 425F and line a sheet pan with parchment.

·      Bring a medium sauce pot to a boil then add the salt and baking soda.  Add the potatoes and boil them for 10 minutes, strain potatoes and set aside.

·      In large bowl, add olive oil, onion powder, garlic powder,  herbs de Provence sea salt and half a cup of parmesans, saving the rest for a later step. Mix to combine, and then add potatoes, gently tossing to coat.

·      Transfer potatoes to a baking sheet, evenly spaced with the cut-side facing down. 

·      Place in the oven and bake for 30 minutes.

·      Remove from the oven, flip each potato and sprinkle with remaining parmesan and fresh thyme.

·      Cook for another 20 minutes or until perfectly crispy and golden.

·      Serve with fresh lemon.
