Pork Loin in Creamy Mustard & Mushroom Sauce

Ingredients

4 tbs Olive Oil

1lb Mushrooms, sliced thin

1 tbs Cape Cod Saltworks Garlic & Pepper Sea Salt

1lbs pork loin, cut in ½ slices

1 Red Onion, sliced thin

2 Cloves Garlic, minced

¾ cup Half & Half

½ cup Lighthouse Keeper’s Beachcomber Mustard

3 tbs Apple Cider Vinegar

1 cup Parsley, finely chopped

Instructions:

Heat a 12” skillet over med-high heat, add 2tbs olive oil and mushrooms, season with 1 tsp garlic and pepper sea salt. Sauté for 8-9 mins and transfer to a bowl.

Add 2 tbs olive oil, sliced pork, onion, minced garlic and 2 tsp garlic and pepper sea salt. Cook for about 4 mins, stirring occasionally.

Add mushrooms back into the pan, then add half & half, mustard. Cook until the sauce thickens, about 3 mins, then add vinegar and parsley, stir to combine.

Serve over rice if desired.
