Spicy Tomato Poached Eggs

Spicy Tomato Poached Eggs

Ingredients:

1 tbs Olive Oil

8oz Spinach

1 tbs Cape Cod Saltworks Garlic and Pepper Sea Salt, plus more for sprinkling

1 jar Lighthouse Keeper’s Spicy Tomato Jam

1 Tomato, Diced

3/4 cup Chicken Broth

1/4 tsp Cayenne Pepper

1 tsp Red Pepper Flakes

8-10  Eggs

½ cup Goat Cheese, Crumbled

Instructions

Drizzle olive oil in a 12” skillet over med heat. When it begins to simmer, add spinach and garlic and pepper sea salt. Stir frequently until spinach wilts, 1-2 mins. Add tomato jam, diced tomato, chicken broth, cayenne pepper and red pepper flakes. Stir in for about 8 mins to allow the liquid to reduce.

Using the back of a spoon, make 8 divots and crack an egg into each one, sprinkling with garlic and pepper sea salt. Then top with crumbled goat cheese.

Cover pan and let simmer for 5-8 mins or until eggs reach your desired doneness.

Top with parsley and serve with thick cut, toasted sourdough.
